Squash Tostadas – Makes 6 tostadas
Winter squash
Tostada Shells
Graded Mild Cheese (or dairy-free almond mozzarella-style cheese)
Salsa
Shredded Lettuce
Bake or boil a cut and peeled winter squash until it is tender. Mash
cooked squash in a bowl. Spread on tostada shells, sprinkle with a grated
cheese and bake in 300 degrees oven until warm. Top with a little salsa
and shredded lettuce and serve. This is a different twist to the bean tostada.
Perfect for a light lunch or dinner. I used all organic ingredients except
the sea salt.
