Curried Apple Soup – Serves 6
6 tart apples, peeled and quartered
4 TBL olive oil, coconut oil or butter
2 medium onions, peeled and chopped
1 tsp grated fresh ginger
1 tsp each (dry mustard, turmeric, ground cumin, ground coriander)
1/4 tsp each (cloves, cinnamon, cayenne pepper)
1-1/2 quarts chicken stock
juice of 1 lemon
sea salt

Saute onions in oil or butter until soft. Stir in spices. Combine onion mixture, apples and stock and simmer until apples are soft. Puree soup, add lemon juice and season with sea salt to taste. Serve in warm bowls. I used all organic ingredients except the sea salt.
