Baked Squash – Serves 2 to 4
1 whole squash (delicata or acorn)
4 TBL olive oil, coconut oil or butter
1/4 tsp cinnamon
1/4 tsp cardamom
1/4 tsp nutmeg
pinch of sea salt
Preheat oven to 350 degrees. Cut squash in half and scoop out the seeds.
Drizzle or brush the cut sides with oil and sprinkle with spices. Place
the squash halves cut side up in a baking dish and bake for 30 minutes or
longer. The squash is ready when it's easily pierced with a fork. You can
use a garnet yam or sweet potato instead of the squash. I used all organic
ingredients except the sea salt.
